Summer Chicken with Tomato Salsa

Another morning of working out from home. I know we all have to do what we gotta do to work out but its just not the same. I hate not having all my machines and endless amounts of free weights surrounding me. Instead Im stuck with the very limited 3kg hand weights 😦 So this morning I busted out what I could with the before said weights and am sucking it up in the hopes Ill have someone to watch my kids this afternoon. One can only hope. One can also count down that there is only one week until school goes back!!

Right off the bat, lets get something straight. This isn’t your typical tomato salsa. Oh no indeed, this is an sweet onion salsa that had my husband ; who is not in the slightest an onion fan – grovelling for more.

I found this recipe while scouring the net for something to eat last night for dinner, and was stoked to find this recipe. But 24 hours later and I cant even find the web page anymore let alone the recipe so we are going to wing it and hopefully I remember all the ingredients. But what makes it so good was the lack of ingredients and the ease!



  • Chicken Breast (I used two)
  • Plain Vanilla yoghurt – enough to marinate your chicken boobies in
  • 1/4 Cup Maple Syrup
  • One Punnet of Cherry tomatoes, quartered
  • Light Mozzarella Balls (baby ones)


  1. Trim chicken and marinate for 20 minutes in the plain yoghurt.
  2. In a pot with some oil, cook off the onions until they are translucent. Add the maple syrup and cook until its nice and sticky. Turn off heat.
  3. Go whack on the grill and get those chickens out of the fridge. Now your going to want to wipe of some of that yoghurt – sounds dumb but have faith.
  4. Cook chicken slowly so it doesn’t burn.
  5. When your about three to four minutes out from the chicken being cooked turn your put back on and warm up the onion mixture. When warm throw in your quartered tomatoes. Heat through.
  6. Serve up your chicken and add the salsa over the top in heaped serves. Rip up some mozzarella and scatter on top.
  7. I served mine with steamed Brocollini.
  8. It was soooo good. Happy Eating!
