Low Calorie Potato Pie!

This pie has been in my family for years! Mum would serve it up to us all the time and the flavors are kind of unbelievable.  I love pie, but the store bought ones and just freaking disgusting and beyong bad for our health. I wont even look in that section and personally think they need to be removed from shelves.

I really have to express how good this pie is, or mainly the meat filling. Its not just a sloppy mince people its almost identical to a good old Aussie meat pie – just without the guilt. Its simply the combitnation on sauces and flavors that are added during in cooking that turn plain old mince into a thick, stick gravy that ozzes with yum!

The original recipe call for home made pastry and if your that was inclined go for it! The calories I show at the end will include home made pastry. I on the other hand choose to make it at home these days minus the pastry. Its still just as good but just hell of lot healthier.

So whats in this potato pie of goodness?

Ingredients:

Pastry:

3/4 Plain Flour

1/4 Cup Self Raising Flour

1 egg white

2 Tablespoons reduced fat margarine or butter

2 tablespoons milk

extra flour to roll pastry.

 

Meat Filling

500 grams of lean beef mince

3/4 diced onion

2 tablespoons Tomato Sauce

2 Tablespoons BBQ sauce

1 Tablespoon Oyster Sauce

1 Teaspoon Worcestershire sauce

2 Teaspoons beef stock powder

6 tablespoons light gravox

1 1/2 cups water

pepper to taste

 

Potato Top

5 cups potatoes (750g) peeled and diced

1/3 cup grated reduced fat cheese

1/4 skim milk

1 teaspoon low fat butter or margarine

1/4 teaspoon salt.

 

METHOD

Preheat oven to 190c

PASTRY:

Place flour into a medium size mixing bowl. Melt butter and add milk. Using a fork beat egg white into milk until combined, pour into flour and fold together. Place pastry on a well floured surface and roll out to fit shape of a round pie dish coasted with cooking spray. Using a rolling pin, roll up pastry, lift onto pie plate. Trim around edges and bake 10-15 minutes or until lightly browned. Leave to one side.

 

Meat filling.

Brown off onion and mince. Add all other ingredients listed for meat filling. Bring to the boil stirring constantly. Turn off heat. The mixture us VERY thick and sticky.

 

Potato Top:

Cook potato. When cooked drain, mash with milk, butter and salt.

 

Assembling Pie:

Spoon meat filling over pastry then top with potato. Sprinkle grated cheese over top and bake for 30 mins or until brown! SOOOOOO GOOODD!
