Veggie Cheese Puffs! Perfect for school lunches!

These are perfect for school lunches! I made them yesterday for lunch for my two girls as Im trialing what they do and do not like to go back into their lunch boxes next week. Needless to say they were a hit and will be making a regualr appearance!

½ cup milk of your choice
1 organic egg
½ tsp smoked paprika
1 organic zucchini, grated
2 spring onions, finely chopped
2 cups grated cheese (cheddar is best)
1 cup self-raising flour or gluten-free flour

Okay, so this is how you do it:

Preheat the oven to 190C. Line a baking tray.

In a large bowl, whisk together the milk and egg. Add the paprika, zucchini, spring onions and cheese.

Sift over the flour. Mix well (it becomes a thick paste). Dollop out portions. Bake for 20-25 minutes until deep golden brown and cooked through.

Store in the fridge in an airtight container for several days.
