Low Calorie Beef Stroganoff!

This recipe is particularly for my sister in law who is on her own weight loss journey and like some of us is missing a lot of the old cream and fat laden pasta dishes from our old eating habits.

This recipe is a good version of the old Beef Stroganoff but without the guilt!

Ingredients

  • 1g Olive oil spray
  • 40g Wholemeal penne pasta
  • 1 tablespoons Extra light sour cream (25g)
  • 2 teapsoons Tomato paste (10g)
  • 2 teaspoons Worcestershire sauce (10g)
  • 1 cups Beef stock liquid (255g)
  • 2 teaspoons Plain flour (6g)
  • 200g Stir-fry beef strips
  • 200g Mushrooms
  • 1 medium Onion (89g)
  • 200g Green beans

Preparation Tips

  • Thinly slice the onion
  • Slice the mushrooms

Method

  1. Spray a large frying pan with oil and heat over medium-high heat. Add the onion and mushroom. Cook, stirring often, for 3-4 minutes or until soft and slightly golden. Transfer to a plate.
  2. Spray the pan again and heat over medium-high heat. Add the beef and cook, stirring occasionally, for 3 minutes or until browned. Add the mushroom mixture and flour. Cook, stirring for 1 minute. Add the stock, Worcestershire sauce and tomato paste. Mix until well combined. Stir in the light cream. Reduce heat to medium-low. Simmer for 4-5 minutes or until thickens slightly. Season with pepper.
  3. Meanwhile, cook the pasta in a saucepan of boiling water following packet directions. Cook the beans in a steamer set over a saucepan of boiling water until tender.
  4. Divide the pasta, beans and stroganoff between serving plates.
