Chicken Muffins!

These were an absolute hit in my house! This little morsels were fantastic and nothing tastes better than when you sit there and watch your kids scoff them down faster than yourself!

These muffins are busting at the seems with healthy stuff, protein and low calorie to boot!

I helped myself to two muffins with a side of salad and its still came in at under 300 cal!

Check it out!




  1. Preheat oven to 200C
  2. Spray muffin pan with canola or olive oil.
  3. Mix all your ingredients together in one large bowl.
  4. Roll the mixture into balls and place in muffin pan. Muffins should be about the size of a racquetball.
  5. Bake for 40 minutes.

I got 9 muffins from this mixture.
