Vegan Caramel Sauce

I love caramel Sauce its like my most pure indulgence. But unfortunately very high in the calories and sugar. So what do we do? Uh…easy! Make our own!

This little morsel of goodness is made from nothing but fresh dates! If anyone has ever tried a fresh date you will know that by themselves they taste like caramel as it is. I love eating fresh daets straight from my fridge, and if you take out the seed and pop in an almond its crunchy nutty caramel goodness!! But even in their own right Dates are great for our health.

They are free from cholesterol with very little fat but are rich in vitamins and minerals. They help to improve the digestive system, being high in soluble and insoluble fibers as well as different kinds of amino acids. Dates are rich in potassium but low in sodium, helping to regulate and promote a healthy nervous system. They are rich in vitamin B1, B2, B3 and B5 along with vitamin A1 and C. THE LIST GOES ON FOREVER!!

But enough about dates and their greatness, lets get down to the recipe.

Ingredients:
1 cup dates
1/2 cup water
1/4 tsp salt

Directions:
Place everything together in a high speed blender, and mix until a smooth syrup consistency is formed. Makes about 12 tbsp of caramel sauce.

Perfect for deserts on ice cream, or as someone suggested to me, dipped in celery. Heck I just love eating it on its own!!
